Coconut sugar is made from the sap of coconut palm trees; extracted once the blossom is removed. This nectar is gently heated until it becomes a delicious, rich unrefined sugar. Analysis of coconut sugar shows that it has a low glycemic index of 35 which is less than refined sugar (68), honey (48) and agave (40).
